Spiked Hot Chocolate

  • 1/4 cup of sugar
  • 4 cups of milk (this recipe serves 4)
  • 1 crushed cinnamon stick
  • A few chocolate chips
  • 1/2 cup of bourbon/ rye

Simmer and stir occasionally for around 10 minutes or until you can smell the cinnamon. Add chocolate and whisk until melted and then strain into another pot. Add the alcohol and top with marshmallows.

Mulled Wine

  • 1 cinnamon stick
  • 1 star anise
  • 4 cloves
  • 50ml brandy

Pour the wine into a large saucepan and add the clementine, cinnamon sticks, star anise and cloves. Cook on a low heat until simmering and then turn the heat off. Strain out the spices and then stir in the brandy. Serve in glasses with a slice of clementine in each.
